Confit of Duck Leg -for 4 persons : 4 raw Duck Legs – Cognac – 1 jar of Duck fat – salt and peppar
Keep the dish covered with plastic film for 24 hours in the fridge.
Fry the legs in a little fat, till they get a nice golden color.
Melt the remaining fat in a casserole.
Salt and pepper widely the legs. Marinate them in some Cognac.
Then rinse the legs.
Dry them also with absorbent paper.
and pour the legs in it.

Recipe for 1 Terrine : - 1 kg uncooked duck liver - 15cl Cognac - 15cl Porto - 13gr salt - 3gr pepper - Nutmeg
Remove the sineurs from the duck liver without damaging it. Sprinkle with a mix of salt, pepper and nutmeg.
And then with the cognac and port. Leave to marinate approx. 20 minutes.
Put the liver in a terrine dish, then the lid of the terrine dish on upside down, in order to squash the liver well into the dish.
Place the terrine in a bain marie of boiling water into the oven at 120° during 30 minutes.

Ingredients: 10 Egg yolks – 200g Sugar – 1L Single crème – 1 Vanilla pod – 50g Brown sugar
Mix the egg yolks with the sugar, without creating a mousse like texture.
Heat the cream with the vanilla.
Pour the cream mixture onto the eggs and sugar.
Pour into ramekins.
Cook in the oven for 45 minutes at 95°c or TH3
Leave to cool.
Sprinkle with brown sugar and heat to melt the sugar.

Good news: after several years, the world's most famous cycling race returns to our department!
The Tour de France will pass July the 25 (Bergerac) and July 26 (Perigueux) in the Dordogne.The 26th, it is a "race against the clock" between Bergerac and Périgueux, and this is the only Time Trial of the 2014 Tour!Riders & caravan will spend the night in Bergerac (100 km Verdoyer) and leave the evening of the 26th in Paris for the finish on the Champs Elysee July the 27th.
We certainly will organise a day trip to see it !

Responding to our customer requests, the direction of Château le Verdoyer decided some changes for this year:A new menu, new theme evenings and new schedules.
From April 20th, every night except Wednesday under the responsibility of Floris Ausems and the new chef Benoit Buisson (who worked as “second de cuisine” last year), Chateau le Verdoyer welcomes its customers with menus from € 16, or the famous “Assiette de Pays” from the Natural Park.

Good campsites have grown accustomed to prizes. They are frequently found among the ANWB campsites of the year or the french magazine Camping et Caravaning or even in the Alan Rogers Awards.
But not so many can boast of having received a prize by a representative of the Queen of the Netherlands. It is however the case of Kawan Village Château le Verdoyer who was distinguished in the person of Richard Ausems, its creator.

This summer, Château le Verdoyer decided to offer an original and ecological animation to the younger together with the local association called Tri-Cycle.
An activity mixing creation and awareness of environmental protection. As it left us pretty decorations...
The Association Tri-Cycle, based in Bourdeilles, is an association which aims to educate young and old to the environmental protection and the fight against waste.
